On Pinterest, I’ve seen that you can use cake mix to make waffles , and that sparked my interest. I’m not really into cake mixes, but I figured if you could use cake batter, homemade would work just as well. I didn’t want plain old cake for breakfast though, so I did some brainstorming. I came up with Angel Food Cake Waffles, which turned out exactly how I wanted them to. They are light, fluffy and perfectly sweet.
Angel Food Cake Waffles
(slightly adapted from Food Network)
1 3/4 cups sugar
1/4 teaspoon salt
1 cup flour, sifted
12 egg whites(room temperature is best)
1/3 cup warm water
1 teaspoon vanilla extract
1 1/2 teaspoons cream of tartar
- Begin preheating your waffle iron. Ours was set between medium/medium high.
- Sift half of the sugar with the salt and the flour and set the remaining sugar aside.(Food Network says to spin the sugar in a food processor for 2 minutes until it’s superfine, but I skipped this and it was fine)
- In a large bowl, use a whisk to thoroughly combine egg whites, water, vanilla, and cream of tartar. After 2 minutes, switch to a hand mixer.
- Slowly sift the reserved sugar, beating continuously at medium speed. Once you have achieved medium peaks, sift enough of the flour mixture in to dust the top of the foam. Using a spatula, gently fold the flour mixture in. Continue this process until all the flour mixture is incorporated.
- Spray the waffle iron on both top and bottom and coat well. Pour enough batter in so that when you close the iron, it will spread out to all the corners. This will differ between irons.
- Once the waffle is fully cooked and lightly browned, remove it from the iron. Serve hot or cooled with strawberries, whipped cream, cinnamon sugar, or other berries.
